* Ingredients :
°2 cups (450 g) Golden Brown Sugar
°1 cup (225g) Granulated Sugar
°1 cup (250ml) milk
°1 C. (14g) butter
°1 C. (4 ml) vanilla
°3/4 cup (170 g) peanuts, salted or unsalted (optional)
*Method
Step 1
Line cake pan with parchment paper also set apart.
2nd step
Combine sugar, milk and butter over medium heat until boiling. Continue to cook the sugar mixture until it reaches 235°F (118°C) on a candy thermometer. If you don't have a candy thermometer, you can also tell if the mixture has reached the optimum stage by dropping a little of the sugar mixture into cold water. If it forms a ball, it's ready.
Step 3
Once it has reached the optimum stage, remove the mixture from the heat and stir in the vanilla.
Step 4
Beat the mixture with a wooden spoon until the mixture thickens and has a creamy texture, then add the peanuts (if desired).
Step 5
Pour the mixture into the prepared cake pan, smoothing the top with a spatula. Let cool completely before cutting into squares. They will be a bit crumbly, so don't worry. Serve immediately or store in an airtight container for up to two weeks.
Enjoy !
